The Governor's Room

This is fine dining at it's best! The Maverick Room

In the heart of downtown, this old favourite with local luminaries and tourists alike is being brought back to life in 2006 with a new twist on menu and service. Scrolled armchairs will ensconce you as you dine in elegant style. Our chef prepares some of the city's finest steaks and seafood and you can choose the cut of beef you like best, and have it grilled to your specifications. Caesar salad will be prepared fresh to order at your tableside while you wait for your entrée, a true hallmark of an era. The Terrace Room

The heritage of Fredericton is reflected in this newly-styled dining room. The scenic vistas of the Saint John River accentuate the rich mahogany wood and tapestries, and add an elegant feel to the room. We are excited to have the culinary skill of Executive Chef Brent Conlin and the talent of his culinary brigade to create exquisite entrées. Classic dishes are the main fare and we proudly feature creative new house signature dishes and desserts.
